The Kitchen is one of the groups that most frequently comes up when I ask Suicide Girls to pick their fave SG hangouts for our ongoing ‘Group Therapy‘ series. We’ve therefore decided to start a new recipe column culled from the culinary brain trust in SG’s Kitchen. In this first post, smokin’ hot Mimmi Suicide shows us how to make her signature dish, Vegan Chili with Guacamole. – Nicole Powers, SG Ed
Mimmi Suicide’s Vegan Chili with Guacamole
This is Suicide Girl Mimmi. I love cooking, so I’m really excited about the new blog series! This recipe is for my go-to-meal and comfort food, which I have cooked many, many times. It was the first vegan meal I ever cooked, and is loved by my vegan and omnivore friends alike. Please note that, until now, this recipe has only existed in my head, so I hope the measurements all work out 😉
Vegan Chili Ingredients:
- 2 red onions
- A shitload of garlic
- Veggie oil
- 1 yellow bell pepper
- 1 medium-sized zucchini
- 2 medium-sized carrots
- 1 can of chickpeas
- 1 can of corn
- 1 can of kidney beans
- 2 cups of textured soy protein
- 2 cans of tomato puree (the sauce stuff, not the paste!)
- Salt
- Pepper
- Sugar
- Chili powder (I would start out with two teaspoons of chili powder, but it totally depends on your taste and the chili powder you use. I buy mine at an Asian supermarket and it’s super super hot!)
- A drop or two of liquid smoke (you can leave it out but it gives it an extra something-something)
- Sriracha sauce
Preparation:
Prepare soy protein according to package and drain. Chop onion and garlic and soften them in some veggie oil in a huge pot placed on the stove top on a medium heat. Add soy protein, chopped pepper, zucchini and carrots and cook for a few minutes, stirring so as not to burn. Throw in the tomato puree and bring to boil. Add chickpeas, corn and kidney beans. Let simmer for at least an hour and season with salt, pepper, sugar, chili powder and a lot of Sriracha sauce. Add liquid smoke (attention: liquid smoke has a very strong taste, start with one drop, taste, and then add more if you feel like it).
Guacamole Ingredients:
Preparation:
Mash the shit out of the avocados. Add tomato, cilantro, chili and garlic, and season with salt and lemon juice.
Put on chili. Enjoy!
My favorite way to eat this is with tortilla chips but you could serve it in tortilla shells…or eat over rice…or with bread…
